Rutgers-Themed Jersey Diner Opens on Campus

Henry's pays homage to Col. Henry Rutgers.

Rutgers University is getting its own Jersey Diner.

Henry’s began serving food on the Livingston Campus Monday morning, according to the University.

The diner is named after Col. Henry Rutgers, who donated $5,000 to the school in 1826 to help keep it afloat, according to the school. It will also be covered in historic photos of the University, a timeline of Col. Rutgers’ life, a clock bearing his face and a bell he donated to the school that would be named after him, according to the University.

It will also bear all the trademarks of a typical New Jersey diner, from the grilled cheese sandwich to the three-egg omelets, smoked salmon and herb cream cheese crepes, according to the University. Breakfast will also be served all day, and customers can order a hamburger in the morning.

Henry’s Manager Sebastian Nieto worked in kitchens in Spain and France, and was also the University’s catering chef and chef to the University President, according to the University. The diner’s chef, Barry Squier, previously owned the critically acclaimed Giraffe Restaurant in Basking Ridge, according to the University.
